  • 14 oz smoked sausage (kielbasa)
  • 1 cup long-grain white rice
  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 3 cups low-sodium chicken broth
  • 1 tsp paprika
  • 1 tsp Cajun seasoning
  • 2 green onions (sliced for garnish)

Instructions

  1. In a large pot over medium heat, add 2 tsp olive oil and sauté chopped onions and bell peppers until softened, about 5 minutes.
  2. Add minced garlic and sliced smoked sausage; cook until browned, approximately 5 minutes.
  3. Stir in long-grain white rice, paprika, and Cajun seasoning; toast for about 2 minutes.
  4. Pour in chicken broth, scraping the bottom of the pot to release flavors. Bring to a boil then reduce heat to low.
  5. Cover and simmer for 20 minutes or until liquid is absorbed. Fluff with a fork and garnish with sliced green onions before serving.
