Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley (optional)

Instructions

  1. Chop chicken into bite-sized pieces and mince garlic.
  2. In a large pot over medium heat, melt butter. Add chicken, season with salt and pepper, and cook until golden (5-7 minutes).
  3. Stir in minced garlic and cook for 30 seconds. Add chicken broth to deglaze the pot.
  4. Add fettuccine and heavy cream; simmer for about 10-12 minutes, stirring occasionally until pasta is al dente.
  5. Stir in Parmesan cheese until melted and creamy. Adjust seasoning as needed.
