- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz fettuccine pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley (optional)
Instructions
- Chop chicken into bite-sized pieces and mince garlic.
- In a large pot over medium heat, melt butter. Add chicken, season with salt and pepper, and cook until golden (5-7 minutes).
- Stir in minced garlic and cook for 30 seconds. Add chicken broth to deglaze the pot.
- Add fettuccine and heavy cream; simmer for about 10-12 minutes, stirring occasionally until pasta is al dente.
- Stir in Parmesan cheese until melted and creamy. Adjust seasoning as needed.
- Garnish with parsley before serving.
