Mini sponge cakes are airy, bite-sized delights that are perfect for any occasion. Their fluffy texture and sweet flavor can be topped with your favorite fruits or creams for a stunning treat.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 2 large eggs (room temperature)
  • 1/4 cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1/2 cup whole milk

  1. Preheat the oven to 350°F (175°C). Grease mini muffin tins or line with paper liners.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and a pinch of salt until well combined.
  3. Make a well in the dry mixture; add melted butter, eggs, vanilla extract, and milk. Mix until smooth without overmixing.
  4. Fill muffin tins about two-thirds full with batter.
  5. Bake for 15-20 minutes or until golden brown; a toothpick inserted should come out clean.
  6. Cool in the pan for 5 minutes before transferring to wire racks. Serve plain or topped with fresh fruit.
