  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 large English cucumber, grated
  • 1 cup full-fat Greek yogurt
  • 2 tbsp fresh dill, chopped
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking sheet with olive oil.
  2. In a bowl, combine minced garlic, olive oil, lemon juice, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  3. Bake chicken for 25-30 minutes until cooked through and golden brown.
  4. While the chicken bakes, squeeze excess moisture from grated cucumber. In a separate bowl, mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper until well combined.
  5. Shred the cooked chicken into bite-sized pieces and mix with the tzatziki sauce. Add any additional veggies if desired. Serve chilled or at room temperature.
