- 2 cups elbow macaroni

- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 15 oz tomato sauce
- 14.5 oz diced tomatoes (fire-roasted preferred)
- 1 cup shredded cheddar cheese
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, heat olive oil and sauté chopped onions and minced garlic until fragrant.
- Add ground beef to the pot; break it apart with a spoon and cook until browned.
- Stir in diced bell peppers along with salt and pepper; cook for about 3-5 minutes until softened.
- Mix in tomato sauce and diced tomatoes; add Italian seasoning and stir well.
- Add elbow macaroni with enough water to cover by an inch; bring to a boil.
- Reduce heat and simmer for 10-12 minutes until pasta is tender.
- Remove from heat, sprinkle cheddar on top, cover briefly until melted, then serve.
