  • 1 lb lean ground beef
  • 2 cups elbow macaroni
  • 1 large onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 15 oz tomato sauce
  • 14.5 oz diced tomatoes (fire-roasted preferred)
  • 1 cup shredded cheddar cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil and sauté chopped onions and minced garlic until fragrant.
  2. Add ground beef to the pot; break it apart with a spoon and cook until browned.
  3. Stir in diced bell peppers along with salt and pepper; cook for about 3-5 minutes until softened.
  4. Mix in tomato sauce and diced tomatoes; add Italian seasoning and stir well.
  5. Add elbow macaroni with enough water to cover by an inch; bring to a boil.
  6. Reduce heat and simmer for 10-12 minutes until pasta is tender.
  7. Remove from heat, sprinkle cheddar on top, cover briefly until melted, then serve.
