- 2 tbsp extra virgin olive oil
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh thyme, chopped
- 4 garlic cloves, minced
- 1 lemon, sliced
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- Rub olive oil all over the chicken and season it generously with salt and pepper. Add minced garlic and herbs under the skin.
- Stuff the cavity with lemon slices and extra herbs.
- Place the chicken breast side up in a roasting pan and roast for 1 hour to 1 hour 15 minutes until it reaches an internal temperature of 165°F (75°C).
- Allow the chicken to rest for at least 15 minutes before carving.
