Description

Ingredients

  • 1 whole chicken (45 pounds)
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 4 garlic cloves, minced
  • 1 lemon, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Rub olive oil all over the chicken and season it generously with salt and pepper. Add minced garlic and herbs under the skin.
  4. Stuff the cavity with lemon slices and extra herbs.
  5. Place the chicken breast side up in a roasting pan and roast for 1 hour to 1 hour 15 minutes until it reaches an internal temperature of 165°F (75°C).
  6. Allow the chicken to rest for at least 15 minutes before carving.
