  • 4 medium yellow squash, sliced
  • 1 medium onion, diced
  • 2 cups shredded sharp cheddar cheese
  • 3 large eggs, beaten
  • 1 cup seasoned breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, heat olive oil and sauté the diced onion until translucent (about 5 minutes).
  3. Add sliced yellow squash to the skillet and sauté until slightly softened (around 7 minutes), seasoning with salt and pepper.
  4. In a mixing bowl, combine the sautéed squash mixture with shredded cheese and beaten eggs. Mix well.
  5. Transfer the mixture to a greased baking dish (9×13 inches) and smooth the top. Sprinkle seasoned breadcrumbs evenly over it.
