  • 6 cups low-sodium beef broth
  • 2 cups egg noodles
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 3 sprigs fresh thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the onions for about 5 minutes until translucent, then add minced garlic and cook until fragrant.
  2. Add beef chunks to the pot and brown on all sides for approximately 6-7 minutes.
