Description

  • 4 large russet potatoes (about 2 lbs)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup bacon bits
  • 4 green onions, chopped
  • 4 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash and poke potatoes with a fork.
  2. Bake potatoes directly on the rack for 45-60 minutes until tender.
  3. Let cool slightly, then halve and scoop the insides into a bowl.
  4. Mix potato flesh with cream cheese, sour cream, butter, half the cheddar, half the bacon, salt, and pepper until smooth.
  5. Spread mixture in a greased baking dish. Top with remaining cheese and bacon bits.
  6. Bake at 350°F (175°C) for 25-30 minutes until bubbly and golden brown.
