Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 packet (2 ¼ tsp) instant yeast
  • 1 cup whole milk
  • ¼ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • 1 cup currants or raisins
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • Zest of one orange
  • Pinch of salt
  • ½ cup icing sugar (for glaze)

Instructions

  1. In a small bowl, combine warm milk and sugar; sprinkle yeast on top and let sit until frothy (about 5 minutes).
  2. In a large bowl, whisk together flour, spices, salt, and orange zest.
  3. Add the yeast mixture and melted butter to the dry ingredients; mix until a shaggy dough forms.
  4. Knead on a floured surface for 8-10 minutes until smooth and elastic.
  5. Place in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled (about 1 hour).
  6. Punch down the dough gently; fold in currants/raisins evenly before shaping into individual buns.
  7. Preheat oven to 375°F (190°C). Place shaped buns on parchment-lined trays; cover while preheating for another 30 minutes before baking for about 20 minutes or until golden brown.
