  • 1 lb ground chicken
  • 1 tbsp fresh ginger, minced
  • 4 green onions, chopped
  • 3 garlic cloves, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp red curry paste
  • 1 tbsp fish sauce
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground chicken, garlic, ginger, green onions, salt, and pepper. Mix until just combined.
  2. Using wet hands, form the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  3. Heat oil in a skillet over medium heat. Sear meatballs until golden brown on all sides (about 5 minutes).
  4. Remove meatballs and set aside. In the same skillet, stir together coconut milk and red curry paste until well mixed.
  5. Return meatballs to the pan, add fish sauce and lime juice. Simmer for 10-15 minutes until the sauce thickens.
  6. Serve over rice or noodles, garnished with green onions or cilantro.
