- 4 green onions, chopped
- 3 garlic cloves, minced
- 1 can (13.5 oz) full-fat coconut milk
- 3 tbsp red curry paste
- 1 tbsp fish sauce
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground chicken, garlic, ginger, green onions, salt, and pepper. Mix until just combined.
- Using wet hands, form the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
- Heat oil in a skillet over medium heat. Sear meatballs until golden brown on all sides (about 5 minutes).
- Remove meatballs and set aside. In the same skillet, stir together coconut milk and red curry paste until well mixed.
- Return meatballs to the pan, add fish sauce and lime juice. Simmer for 10-15 minutes until the sauce thickens.
