- 1 cup sago pearls
- 2 cups fresh strawberries, hulled and sliced
- 1 can (13.5 oz) full-fat coconut milk
- 2 cups water (for cooking sago)
- 3 tbsp granulated sugar (adjust to taste)
- 1 tsp pure vanilla extract
Instructions
- Rinse the sago pearls under cold water until clear. In a saucepan, bring 2 cups of water to a boil. Add the rinsed sago pearls and cook over medium heat for about 15 minutes or until translucent and slightly chewy. Drain excess water and let cool.
- While the sago cooks, wash and slice the strawberries; set aside some slices for garnish.
- In a separate bowl, mix coconut milk, sugar, and vanilla extract until smooth. Gently fold in the cooled sago pearls until evenly coated.
- Layer strawberry pieces at the bottom of serving bowls or glasses and spoon the creamy sago mixture generously on top.
- Chill in the refrigerator for at least 30 minutes before serving.
