  • 1 cup sago pearls
  • 2 cups fresh strawberries, hulled and sliced
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups water (for cooking sago)
  • 3 tbsp granulated sugar (adjust to taste)
  • 1 tsp pure vanilla extract

Instructions

  1. Rinse the sago pearls under cold water until clear. In a saucepan, bring 2 cups of water to a boil. Add the rinsed sago pearls and cook over medium heat for about 15 minutes or until translucent and slightly chewy. Drain excess water and let cool.
  2. While the sago cooks, wash and slice the strawberries; set aside some slices for garnish.
  3. In a separate bowl, mix coconut milk, sugar, and vanilla extract until smooth. Gently fold in the cooled sago pearls until evenly coated.
  4. Layer strawberry pieces at the bottom of serving bowls or glasses and spoon the creamy sago mixture generously on top.
  5. Chill in the refrigerator for at least 30 minutes before serving.
