- 2 lemons (halved)
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 6 garlic cloves (whole)
- 3 tbsp extra virgin olive oil
- 2 tsp salt
- 1 tsp black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry.
- Rub the entire chicken with olive oil, then season generously with salt and pepper, including inside the cavity.
- Stuff the cavity with halved lemons, garlic cloves, and fresh herbs.
- Place the chicken breast-side up in a roasting pan and roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C).
- Let it rest for 10-15 minutes before carving.
