Description

  • 24 ladyfingers (about 7 oz)
  • 1 cup strong brewed coffee, cooled
  • 1 tsp vanilla extract
  • 8 oz mascarpone cheese, at room temperature
  • 1/3 cup granulated sugar
  • 2 cups fresh strawberries, sliced
  • Unsweetened cocoa powder for dusting

Instructions

  1. Brew strong coffee and let it cool; mix in vanilla extract.
  2. In a bowl, combine mascarpone cheese and sugar; whip until smooth.
  3. Dip each ladyfinger briefly into the coffee mixture; layer half in a serving dish.
  4. Spread half of the mascarpone cream over the ladyfingers, followed by a layer of sliced strawberries.
  5. Repeat with remaining ladyfingers and mascarpone cream; smooth the top.
  6. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  7. Dust cocoa powder on top before serving; slice and enjoy!
