  • 4 large eggs
  • 1 cup granulated sugar
  • 8 oz full-fat cream cheese, softened
  • 2 cups fresh strawberries, chopped
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp milk (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a jelly roll pan and line it with parchment paper.
  2. In a bowl, whip together eggs and granulated sugar until light and fluffy. Gently fold in flour until combined.
  3. Spread the batter evenly in the prepared pan and bake for 12-15 minutes or until golden.
  4. Once baked, invert the cake onto a powdered-sugar-dusted kitchen towel; peel off parchment and roll it up while warm. Let it cool completely.
  5. For the filling, beat together cream cheese, powdered sugar, vanilla extract, and milk until smooth. Fold in chopped strawberries.
  6. Carefully unroll the cooled cake and spread the filling evenly over it. Roll it back up tightly and wrap in plastic wrap; refrigerate for at least an hour.
  7. Before serving, dust with powdered sugar or drizzle with chocolate sauce.
