  • 4 medium Russet potatoes (about 600g), peeled and cubed
  • 1 lb (450g) ground beef or pork
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped (any variety)
  • 3 tbsp low-sodium soy sauce
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 tbsp vegetable oil

Instructions

  1. Prepare all ingredients by peeling and cubing the potatoes, dicing the onion, and mincing the garlic.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the cubed potatoes and sauté for approximately 8 minutes until tender and golden-brown.
  3. Stir in the diced onion and cook until translucent, about 3 minutes.
  4. Add the ground meat to the skillet, breaking it apart with a spatula as it cooks until browned (about 5 minutes).
  5. Mix in the minced garlic and bell peppers; sauté for another 5 minutes.
  6. Drizzle soy sauce over the mixture, stirring well. Season with salt and black pepper to taste.
  7. Cook for an additional 3 minutes, then serve hot.
