Ingredients

  • 1 lb steak (sirloin or ribeye)
  • 8 oz fettuccine or spaghetti
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup low-sodium beef broth
  • 1 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Cook pasta according to package instructions until al dente, reserving ½ cup of pasta water before draining.
  2. Season steak with salt and pepper. In a hot skillet with olive oil, sear the steak for about 3 minutes per side until browned. Let it rest.
  3. In the same skillet, sauté garlic until fragrant (about 1 minute). Deglaze with beef broth.
  4. Stir in heavy cream and Italian herbs; simmer until slightly thickened.
  5. Slice the rested steak thinly against the grain. Toss cooked pasta into the sauce along with reserved pasta water.
  6. Serve pasta topped with sliced steak and sprinkle with Parmesan cheese.
