- 2 tsp Szechuan peppercorns
- 8 oz egg noodles or rice noodles
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp low-sodium soy sauce
- 2 tbsp chili paste (adjust to taste)
- 2 tbsp vegetable oil
- 3 green onions, chopped
Instructions
- Gather ingredients. Thaw shrimp if frozen. Mince garlic, grate ginger, and chop green onions.
- Boil water and cook noodles per package instructions until al dente. Drain and reserve some pasta water.
- In a hot pan with vegetable oil, sauté garlic and ginger for about 30 seconds until fragrant. Add shrimp and cook until pink and opaque.
- Stir in soy sauce, chili paste, and Szechuan peppercorns; simmer for 2 minutes.
- Toss in drained noodles with reserved pasta water if needed; mix well.
- Top with chopped green onions before serving hot.
