Ingredients

  • 2 cups sushi rice
  • 8 oz sushi-grade salmon, diced
  • 1 ripe avocado, diced
  • 1 cucumber, diced (preferably Japanese)
  • 4 nori sheets, cut into 4-inch squares
  • 2 tbsp Sriracha sauce (adjust for spice level)
  • 2 tbsp mayonnaise
  • 1 tbsp toasted sesame seeds
  • 2 green onions, chopped

Instructions

  1. Rinse sushi rice under cold water until clear; cook according to package instructions.
  2. In a bowl, mix diced salmon with mayonnaise and Sriracha; adjust heat to taste.
  3. Dice avocado and cucumber into small cubes.
  4. Cut nori sheets into squares; press into muffin tins and bake at 350°F (175°C) for about 10 minutes until crispy.
  5. Fill each nori cup halfway with sushi rice; top with spicy salmon mixture, avocado, and cucumber.
  6. Garnish with sesame seeds and green onions before serving warm.
