  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp red curry paste
  • 4 cups vegetable broth
  • 1 cup bell peppers, sliced
  • 1 cup spinach, chopped
  • 1 cup carrots, sliced
  • 4 oz tofu or chicken, diced
  • 2 tbsp lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat vegetable broth over medium heat until simmering. Stir in the red curry paste until dissolved.
  2. Gradually add the coconut milk while stirring until well combined.
  3. Cook ramen noodles in the pot according to package instructions (about 3 minutes).
  4. During the last minute of cooking, add bell peppers and carrots; stir until slightly softened.
  5. Fold in spinach just before removing from heat and mix in lime juice.
