- 2 cups sliced zucchini (about 2 medium)
- 2 cups sliced yellow squash (about 2 medium)
- 1 cup diced sweet onion
- 1 ½ cups shredded sharp cheddar cheese
- 3 large eggs
- 1 cup Panko breadcrumbs
- 4 tablespoons unsalted butter
Instructions
- Preheat oven to 350°F (175°C) and grease a baking dish.
- In a skillet, melt butter over medium heat. Sauté diced onions until translucent (about 5 minutes). Add sliced zucchini and yellow squash; cook until slightly tender.
- In a large bowl, mix sautéed vegetables with beaten eggs, shredded cheese (reserve some for topping), salt, pepper, and half of the breadcrumbs.
- Pour mixture into the greased baking dish. Top with remaining breadcrumbs and reserved cheese.
- Bake for 30-35 minutes until bubbly and golden brown.
