Ingredients

  • 2 cups sliced zucchini (about 2 medium)
  • 2 cups sliced yellow squash (about 2 medium)
  • 1 cup diced sweet onion
  • 1 ½ cups shredded sharp cheddar cheese
  • 3 large eggs
  • 1 cup Panko breadcrumbs
  • 4 tablespoons unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a skillet, melt butter over medium heat. Sauté diced onions until translucent (about 5 minutes). Add sliced zucchini and yellow squash; cook until slightly tender.
  3. In a large bowl, mix sautéed vegetables with beaten eggs, shredded cheese (reserve some for topping), salt, pepper, and half of the breadcrumbs.
  4. Pour mixture into the greased baking dish. Top with remaining breadcrumbs and reserved cheese.
  5. Bake for 30-35 minutes until bubbly and golden brown.
