  • 1 lb large shrimp, deveined
  • 8 small corn tortillas
  • 2 cups shredded cabbage (green or purple)
  • 2 limes, juiced
  • 1 ripe avocado, sliced
  • ½ cup fresh cilantro, chopped
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • ¼ cup sour cream or Greek yogurt
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse and pat dry shrimp. Season with cumin, chili powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat. Add shrimp and cook until pink and opaque (about 3-4 minutes per side).
  3. In a bowl, mix shredded cabbage with lime juice, cilantro, salt, and pepper.
  4. Heat tortillas in a dry skillet for about 30 seconds on each side.
  5. Place cooked shrimp on each tortilla topped with cabbage slaw and avocado slices. Add sour cream if desired.
