  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. Place chicken breasts in a pot and cover with chicken broth. Simmer over medium heat until cooked through (165°F), about 15-20 minutes.
  2. In a skillet, sauté chopped onion and garlic in olive oil until golden brown.
  3. Remove chicken from broth, shred with two forks, then combine with sautéed onions and garlic.
  4. In the same skillet, add soy sauce, brown sugar, and lime juice; simmer for 5 minutes until slightly thickened.
  5. Stir shredded chicken into the sauce until well coated. Serve warm.
