Description

Ingredients

  • 2 skinless salmon fillets (6 oz each)
  • 1 sheet puff pastry (thawed)
  • 1 cup fresh spinach (chopped)
  • 4 oz cream cheese (softened)
  • 2 tbsp fresh dill (chopped)
  • 1 egg (beaten for egg wash)
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine chopped spinach, cream cheese, and dill until mixed well.
  3. Season salmon fillets with salt and pepper, then place them atop the cream cheese mixture.
  4. Roll out the puff pastry on a floured surface into rectangles large enough to encase the salmon.
  5. Position the salmon on one side of each pastry rectangle and fold over to seal edges.
  6. Brush tops with beaten egg for a golden finish.
  7. Bake on a parchment-lined sheet for 20-25 minutes until golden brown.
