- 8 oz linguine
- 2 fresh salmon fillets (6 oz each)
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 3 tbsp chilli oil
- Juice of 1 lemon
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the linguine in salted boiling water according to package instructions until al dente (about 8–10 minutes).
- In a skillet, heat olive oil over medium heat. Season salmon fillets with salt and pepper; place skin-side down in the hot pan. Cook for about 4 minutes until golden, then flip and cook for another 3–4 minutes until cooked through.
- Remove the salmon and let it rest. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Add chilli oil and lemon juice, stirring to combine.
- Drain the linguine, reserving 1/2 cup of pasta water. Toss the pasta in the skillet with the garlic-chilli mixture, adding reserved pasta water as needed for creaminess.
- Flake the salmon into bite-sized pieces and gently fold into the pasta along with chopped parsley. Adjust seasoning before serving.
