  • 8 oz fettuccine pasta
  • 2 (6 oz) fresh salmon fillets
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in salted boiling water until al dente (8-10 minutes). Drain and set aside.
  2. In a skillet over medium heat, melt the butter. Season the salmon fillets with salt and pepper and sear skin-side down for about 4-5 minutes until golden brown. Remove and let rest.
  3. In the same skillet, add minced garlic and sauté until fragrant (about 30 seconds), then pour in heavy cream.
  4. Stir in grated Parmesan cheese until melted and smooth. Season with salt and pepper.
  5. Toss cooked fettuccine into the sauce to coat evenly. Flake the salmon gently into bite-sized pieces and mix it into the pasta.
  6. Serve immediately, garnished with chopped parsley.
