  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs, room temperature
  • 1 cup blueberries (fresh or thawed)
  • 1 cup strawberries, sliced
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter; press firmly into an 8×8-inch baking dish.
  2. In another bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla until combined.
  3. In separate bowls, mash blueberries with lemon juice and slice strawberries.
  4. Pour half of the cream cheese mixture over the crust. Add spoonfuls of blueberry and strawberry mixtures on top, followed by the remaining cream cheese batter.
  5. Gently swirl with a knife to create a marbled effect. Bake for 35-40 minutes until edges are set but the center is slightly jiggly.
  6. Allow cooling completely before refrigerating for at least two hours before slicing.
