Description

Pumpkin Sage Gnocchi is an enchanting autumn dish that combines tender, pillowy gnocchi with the rich flavors of roasted pumpkin and aromatic sage. This cozy meal is perfect for chilly evenings, offering a delightful burst of seasonal flavors that will impress your guests. With its vibrant colors and sumptuous taste, Pumpkin Sage Gnocchi is surprisingly easy to prepare, making it an ideal choice for both casual dinners and festive gatherings.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup pumpkin puree (canned or homemade)
  • 10 fresh sage leaves, chopped
  • 1 large egg
  • 1 tsp salt
  • 4 tbsp unsalted butter

Instructions

  1. In a large bowl, combine pumpkin puree and egg until smooth.
  2. Gradually mix in salt and flour, one cup at a time, until a soft dough forms.
  3. On a floured surface, divide the dough into four portions. Roll each into ropes about half an inch thick and cut into bite-sized pieces.
  4. Use a fork to press down on each piece to create ridges.
  5. Boil salted water in a large pot; add gnocchi in batches until they float (about 2-3 minutes).
  6. In a skillet, melt butter over medium heat and sauté chopped sage until crispy.
  7. Transfer cooked gnocchi to the skillet and toss gently to coat before serving with grated Parmesan cheese.
