  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup chopped bell peppers (mixed colors)
  • 1/2 cup chopped onions
  • 1/2 cup sliced mushrooms
  • 1 tsp Italian seasoning
  • 1 cup cooked pepperoni or sausage
  • 1/2 cup additional shredded cheese
  • Fresh basil (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Cook the penne pasta according to package instructions until al dente; drain and set aside.
  3. In a skillet over medium heat, sauté bell peppers, onions, and mushrooms until tender (about 5-7 minutes).
  4. In a large bowl, mix the cooked pasta, pizza sauce, sautéed vegetables, cooked protein, and half of the shredded cheese until evenly combined.
  5. Pour the mixture into the prepared baking dish, spreading it evenly. Top with remaining shredded cheese.
