Ingredients

Scale

  • ½ cup granulated sugar
  • Gel food coloring (as needed)
  • 1 cup buttercream or favorite filling

Instructions

  1. Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a clean bowl, whip egg whites until foamy, then gradually add granulated sugar, continuing to beat until stiff peaks form and the mixture is glossy.
  3. Sift together almond flour and icing sugar, then gently fold into the meringue until well combined without deflating it.
  4. Add gel food coloring to achieve your desired hue and mix gently.
  5. Transfer batter to a piping bag fitted with a round tip and pipe small circles onto prepared sheets, leaving space between them. Let rest for 30 minutes to form a skin before baking for 15-18 minutes.
