- 2 lbs Yukon Gold potatoes
- 1 cup freshly grated Parmesan cheese
- 4 tbsp unsalted butter, melted
- 1 tsp garlic powder
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the Yukon Gold potatoes; cut them into quarters.
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain and return them to the pot; mash gently until smooth but still slightly chunky.
- Stir in melted butter, garlic powder, salt, pepper, and half of the Parmesan cheese until well combined.
- Spread the mixture onto a greased baking sheet; create ridges using a fork.
- Drizzle olive oil over the top and sprinkle with remaining Parmesan cheese.
- Bake for 25-30 minutes until golden brown and crispy.
