  • 2 lbs Yukon Gold potatoes
  • 1 cup freshly grated Parmesan cheese
  • 4 tbsp unsalted butter, melted
  • 1 tsp garlic powder
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the Yukon Gold potatoes; cut them into quarters.
  3. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  4. Drain and return them to the pot; mash gently until smooth but still slightly chunky.
  5. Stir in melted butter, garlic powder, salt, pepper, and half of the Parmesan cheese until well combined.
  6. Spread the mixture onto a greased baking sheet; create ridges using a fork.
  7. Drizzle olive oil over the top and sprinkle with remaining Parmesan cheese.
  8. Bake for 25-30 minutes until golden brown and crispy.
