  • 4 cod fillets (6 oz each)
  • 2 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Pat cod fillets dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Add cod fillets, cooking for about 4 minutes until golden brown.
  3. Flip the fillets gently and cook for an additional 3 minutes until cooked through.
  4. Remove the fish and reduce heat. In the same pan, sauté minced garlic for about 1 minute.
  5. Stir in heavy cream and chicken broth; simmer for 5 minutes or until thickened.
  6. Return cod to the pan to warm through in the sauce.
  7. Serve cod drizzled with garlic cream sauce and garnish with parsley.
