Description

  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1/2 cup marshmallow fluff
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In another bowl, cream softened butter and sugars until fluffy. Beat in egg and vanilla until combined.
  4. Gradually mix in dry ingredients until just combined. Fold in oats gently.
  5. Drop tablespoon-sized balls of dough onto parchment-lined baking sheets about two inches apart.
  6. Bake for 10-12 minutes until edges are golden but centers remain soft.
  7. While cooling, prepare the cream filling by beating butter, powdered sugar, marshmallow fluff, and vanilla until smooth.
  8. Spread filling between two cookies to create sandwiches and refrigerate for at least one hour before serving.
