  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk (or buttermilk)
  • 3 tbsp cocoa powder
  • 1/4 cup strawberry puree
  • 1 cup heavy cream
  • 1 cup icing sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with colorful cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream the softened butter and sugar until fluffy. Add eggs and vanilla; mix well.
  4. Gradually alternate adding dry ingredients and milk to the butter mixture until just combined.
  5. Divide batter into three bowls: add cocoa powder to one for chocolate flavor, leave one plain for vanilla, and mix strawberry puree into the third.
  6. Spoon batters into muffin tins, filling each about two-thirds full. Swirl gently if desired.
  7. Bake for 18–20 minutes until a toothpick comes out clean. Cool completely on wire racks.
  8. Whip heavy cream with icing sugar until stiff peaks form; frost cooled cupcakes generously.
