  • 4 egg whites (room temperature)
  • 1 cup caster sugar
  • 1 tsp white vinegar
  • 1 cup fresh strawberries (sliced)
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper, drawing an 8-inch circle as a guide.
  2. In a clean bowl, whip egg whites until foamy using an electric mixer on medium speed. Gradually add caster sugar until stiff peaks form (about 5 minutes).
  3. Gently fold in the white vinegar and cornstarch into the egg whites.
  4. Spoon the meringue onto the prepared baking sheet, shaping it into a nest with slight indentations.
  5. Bake for about 1 hour and 15 minutes until dry outside but soft inside; turn off the oven and let cool completely.
  6. While cooling, whip heavy cream with vanilla extract until soft peaks form and slice fresh strawberries.
  7. Assemble by topping the cooled pavlova with whipped cream and sliced strawberries just before serving.
