Ingredients

  • 2 cups Granny Smith apples (about 2 medium apples), peeled and sliced
  • 1 cup Honeycrisp apples (about 1 medium apple), peeled and sliced
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 pie crust (store-bought or homemade)
  • 2 tbsp unsalted butter, diced
  • 1 egg mixed with 1 tbsp water (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix sliced apples with sugar, cinnamon, and lemon juice until coated.
  3. Roll out the pie crust on a floured surface to about 1/8 inch thick; cut into circles.
  4. Place dough circles in muffin tins or ramekins; fill with apple mixture and dot with butter.
  5. Top with another dough circle; cut small slits for steam vents.
  6. Bake for 25-30 minutes until golden brown.
  7. Cool slightly before serving.
