  • 2 medium aubergines (eggplants), sliced
  • 2 medium starchy potatoes (e.g., Russets), sliced
  • 1 cup high-quality tomato sauce
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp paprika
  • 4 tbsp butter (for béchamel)
  • 4 tbsp flour (for béchamel)
  • 2 cups milk (for béchamel)
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese or shredded mozzarella

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants and potatoes into thin rounds, sprinkle with salt, and let sit for 20 minutes to remove moisture.
  3. In a skillet over medium heat, sauté diced onion in olive oil until translucent. Add garlic and cook for another minute before adding the ground meat. Brown the meat thoroughly.
  4. Stir in cumin, paprika, and tomato sauce; simmer for about 15 minutes until thickened.
  5. For the béchamel sauce, melt butter over low heat, whisk in flour until smooth, then gradually add milk while whisking continuously until thickened. Season with salt and pepper.
  6. In a baking dish, layer potatoes, eggplant slices, and half of the meat mixture. Repeat the layers until all ingredients are used.
  7. Pour béchamel sauce over the top layer and sprinkle with cheese.
  8. Bake for 30-40 minutes until golden brown. Let cool slightly before serving.
