  • 1 lb lean ground beef
  • 12 corn tortillas
  • 1 can (15 oz) refried beans
  • 2 cups shredded Monterey Jack cheese
  • 1 cup salsa
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Stir in chopped onion and minced garlic; sauté until fragrant.
  4. Add cumin and chili powder; mix well for two minutes before adding bell peppers.
  5. In a baking dish, layer corn tortillas as the base, followed by half of the beef mixture, refried beans, half of the salsa, and half of the cheese.
  6. Repeat layers with remaining ingredients.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly.
  8. Let rest for 10 minutes before serving; garnish with cilantro if desired.
