- 12 corn tortillas
- 1 can (15 oz) refried beans
- 2 cups shredded Monterey Jack cheese
- 1 cup salsa
- 1 cup diced bell peppers (mixed colors)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tsp cumin
- 2 tsp chili powder
- Fresh cilantro (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Stir in chopped onion and minced garlic; sauté until fragrant.
- Add cumin and chili powder; mix well for two minutes before adding bell peppers.
- In a baking dish, layer corn tortillas as the base, followed by half of the beef mixture, refried beans, half of the salsa, and half of the cheese.
- Repeat layers with remaining ingredients.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly.
