  • 4 cod fillets (6 oz each)
  • 1 cup mixed green and black olives, pitted
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp fresh parsley or basil, chopped
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Arrange the cherry tomatoes and olives in the bottom of the dish.
  4. Place cod fillets on top and drizzle with olive oil. Sprinkle minced garlic over the fish.
  5. Squeeze lemon juice generously over all ingredients.
  6. Season with salt and pepper.
  7. Bake for about 20 minutes or until the cod flakes easily with a fork.
