- 2 tbsp taco seasoning
- 6 flour or corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup chopped fresh vegetables (tomatoes, onions, lettuce)
- 1 can (15 oz) black beans, rinsed
- 1/2 cup sliced black olives
- 1–2 jalapeños (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and stir in taco seasoning with water according to package instructions.
- Grease a 9×13-inch baking dish and layer tortillas at the bottom.
- Spoon half of the meat mixture over the tortillas, followed by half of the shredded cheese. Repeat layering with remaining ingredients.
- Bake for 25-30 minutes until bubbly and golden brown.
- Allow cooling for 5 minutes before slicing into squares. Serve topped with sour cream and fresh veggies.
