  • 2 tbsp milk

Instructions

  2. In a bowl, whisk together the flour, ground ginger, cinnamon, baking soda, and a pinch of salt.
  3. In another bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time followed by molasses; mix until smooth.
  5. Gradually incorporate the dry mixture until just combined.
  6. Drop tablespoon-sized balls onto prepared sheets and bake for 10–12 minutes.
  7. For the filling, beat cream cheese with powdered sugar and milk until smooth.
  8. Assemble the pies by spreading filling on half of the cooled cookies and sandwiching them.
