  • 2 lbs Yukon Gold potatoes
  • 6 slices thick-cut bacon
  • 1 medium yellow onion, finely chopped
  • 1/4 cup apple cider vinegar
  • 2 tsp Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Boil the cubed Yukon Gold potatoes in salted water until fork-tender, about 15 minutes. Drain and set aside.
  2. In a skillet, fry diced bacon until crispy. Remove bacon but retain rendered fat.
  3. Sauté the chopped onion in the bacon fat until translucent.
  4. Whisk together apple cider vinegar, mustard, salt, and pepper in a bowl; pour over sautéed onions.
  5. Gently fold the cooked potatoes and crispy bacon into the skillet with the dressing mixture.
