  • 2 large eggs

  • 1 cup panko breadcrumbs
  • Oil for frying (vegetable or canola)

Instructions

  1. Prepare the filling by mixing softened cream cheese, sugar, cinnamon (if using), and vanilla extract in a bowl until smooth.
  2. Slice the bread into thick slices (about 1 inch).
  3. Spread the cream cheese mixture on one slice of bread, top with sliced strawberries, and cover with another slice to form a sandwich.
  4. In a shallow dish, beat the eggs until frothy; in another dish, place panko breadcrumbs.
  5. Dip each sandwich into the egg mixture and then coat with panko breadcrumbs.
