  • 12 mini corn tortillas
  • 1 lb lean ground beef or chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly spray muffin tins with nonstick spray and press mini tortillas into each muffin cup.
  3. In a skillet over medium heat, cook the ground meat until browned. Break it apart as it cooks. Stir in the enchilada sauce for the last few minutes.
