- 1 cup confectioners' sugar (120g)
- 2 tbsp cocoa powder (15g)
- 2 egg whites (room temperature)
- 1/4 cup granulated sugar (50g)
- 4 oz dark chocolate (70% cocoa)
- 1/4 cup heavy cream (60ml)
- 1 tbsp unsalted butter (14g)
- Fresh raspberries for garnish
Instructions
- Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
- Sift together almond flour, confectioners' sugar, and cocoa powder in a bowl.
- In a separate bowl, whip egg whites until frothy. Gradually add granulated sugar until stiff peaks form.
- Gently fold the dry mixture into the whipped egg whites until combined and thick.
- Pipe small circles onto prepared baking sheets and let rest for 30 minutes to form a skin.
- Bake for 15-20 minutes or until firm but not browned. Cool completely on wire racks.
- For ganache, melt dark chocolate over simmering water. Stir heated cream into chocolate until smooth, then mix in butter.
- Once cooled, pipe ganache onto half of the macaron shells and top with fresh raspberries before sandwiching with another shell.
