  • 2 tsp curry powder
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • Salt and pepper to taste

Instructions

  1. Prep the butternut squash by peeling and chopping it into bite-sized pieces.
  2. Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
  3. Stir in minced garlic and grated ginger; cook until fragrant (about 1 minute).
  4. Add the butternut squash and curry powder to the pot, stirring to coat.
  5. Pour in the vegetable broth and bring to a gentle boil. Reduce heat and simmer uncovered for about 20 minutes or until the squash is tender.
  6. Use an immersion blender or transfer to a blender to puree until smooth. Stir in coconut milk and season with salt and pepper to taste.
