  • 9 no-boil lasagna noodles
  • 1 medium zucchini, sliced
  • 2 cups fresh spinach
  • 1 cup cremini mushrooms, chopped
  • 15 oz ricotta cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Boil the lasagna noodles according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add zucchini and mushrooms; sauté for about 5 minutes until softened. Stir in spinach until wilted.
  3. In a bowl, mix ricotta cheese with Italian seasoning and half of the Parmesan cheese until smooth.
  4. In a baking dish, spread a layer of marinara sauce. Add noodles, followed by half the sautéed vegetables, ricotta mixture, mozzarella, and more marinara sauce. Repeat layers until all ingredients are used.
  5. Cover with foil and bake for 25 minutes. Remove foil, top with remaining mozzarella, and bake uncovered for another 15 minutes until golden brown.
