- 9 no-boil lasagna noodles
- 1 medium zucchini, sliced
- 2 cups fresh spinach
- 1 cup cremini mushrooms, chopped
- 15 oz ricotta cheese
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- 2 tbsp extra virgin olive oil
Instructions
- Preheat the oven to 375°F (190°C). Boil the lasagna noodles according to package instructions until al dente; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add zucchini and mushrooms; sauté for about 5 minutes until softened. Stir in spinach until wilted.
- In a bowl, mix ricotta cheese with Italian seasoning and half of the Parmesan cheese until smooth.
- In a baking dish, spread a layer of marinara sauce. Add noodles, followed by half the sautéed vegetables, ricotta mixture, mozzarella, and more marinara sauce. Repeat layers until all ingredients are used.
- Cover with foil and bake for 25 minutes. Remove foil, top with remaining mozzarella, and bake uncovered for another 15 minutes until golden brown.
