  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups fresh spinach
  • 2 tbsp curry powder
  • Juice of 1 lime
  • 2 tbsp olive oil

Instructions
