  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 9 oven-ready lasagna noodles
  • 8 oz cream cheese (softened)
  • 2 cups shredded sharp cheddar cheese
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 1 tsp onion powder
  • 2 tsp Italian seasoning
  • 1 cup low-sodium chicken broth
  • 1 cup fresh or frozen spinach (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook seasoned chicken breasts until golden brown and internal temperature reaches 165°F (about 7-8 minutes per side). Let rest before shredding.
  3. In a bowl, mix softened cream cheese, cheddar cheese, diced tomatoes, minced garlic, onion powder, Italian seasoning, and shredded chicken until combined.
  4. Spread a thin layer of the mixture in the bottom of the baking dish. Layer with lasagna noodles and repeat until ingredients are used up, finishing with sauce on top.
  5. Cover with aluminum foil and bake for 25 minutes; remove foil and bake an additional 10-15 minutes until bubbly and golden brown.
  6. Allow to rest for about 10 minutes before slicing.
