Description

Coffee Cake Muffins are a delightful fusion of classic coffee cake flavors in a convenient muffin form, perfect for breakfast or an afternoon snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1 cup milk (whole or 2%)
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup brown sugar (packed) for the topping
  • 1 tbsp ground cinnamon for the topping
  • 1/4 cup chopped nuts (optional) for the topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tray with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon until combined.
  3. In another bowl, mix the melted butter, milk, and eggs until smooth. Gently fold the wet ingredients into the dry mixture until just combined.
  4. In a separate bowl, combine brown sugar, cinnamon, and chopped nuts for the topping.
  5. Fill each muffin cup two-thirds full with batter and sprinkle the topping generously on each muffin.
  6. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean. Let cool slightly before transferring to a wire rack.
